I love to read these older posts! I do a lot of dehydrating too when I come across a surplus of anything. I dehydrated a LOT of collard greens and mushrooms, as well as bananas, sweet corn and greens. Dehydrated sweet corn is a tasty snack. If you get a watermelon that doesn't have much flavor or isn't very sweet it will taste fantastic if you dehydrate it. It is like good for you candy. I also cook dried beans and then dehydrate them. They make a tasty snack and they are also great to have on hand if you need beans in a hurry. I like to have on hand dehydrated green beans, zucchini, onions, greens etc. to make a tasty soup.
