Harry S Truman was president when I was born and world war II had ended. I grew up in a time when lunch was put in a brown paper bag and a sandwich was wrapped with wax paper. There was no such thing as pantyhose, we wore stockings that attached to the rubbery clippy things that attached to the girdle. Convenience stores were not common and when we took a trip we packed a picnic basket because many places did not have fast food. Highways had places to pull over and stop, some with picnic tables. Ganny Bread Gluten Free

If you cannot eat Gluten and are really craving bread, this recipe is for you.
 
Use a Gluten Free All Purpose Baking Mix that contains xanthum gum.
 
This recipe is for a mini loaf of gluten free bread since gluten free flour is so expensive. This loaf about a third of the size of a normal loaf.pictures will follow recipe
 
1 teaspoon yeast
1 tablespoon sugar
1/2 plus 1 tablespoon warm water 105 degrees
 
Mix in a small bowl and set aside for 5 - 8 minutes
 
in another small bowl
1 egg
1 tablespoon plus 1 teaspoon olive oil
1 teaspoon honey
whisk together and set aside
 
in a medium size bowl
1 & 1/3 cup gluten free flour with xanthum gum
1/4 teaspoon salt
 
Put the yeast mixture and the egg mixture into the flour and stir with a rubber spatula.  Place this dough (dough will be soft and not gluteny like regular bread dough) into a small bread pan that has been coated thinly with olive oil.
I place mine in a cold oven with a light on and a pan of warm water under for 1 hour.
Then pre-heat oven to 380 degrees and bake for 20 minutes then put foil over the top and bake another 15 minutes.  Remove from oven.  Cool on rack.  Store bread in the refrigerator if you don't eat it all at once wink
