Harry S Truman was president when I was born and world war II had ended. I grew up in a time when lunch was put in a brown paper bag and a sandwich was wrapped with wax paper. There was no such thing as pantyhose, we wore stockings that attached to the rubbery clippy things that attached to the girdle. Convenience stores were not common and when we took a trip we packed a picnic basket because many places did not have fast food. Highways had places to pull over and stop, some with picnic tables. Sweet potato fries and cubes

We had a request by a family member to post how we cook our sweet potato fries and cubes.

There really is not a recipe, just our way of making them. There is nothing fancy here at all because all you need is sweet potatoes and a small amount of oil and a couple of cloves of garlic. We use extra light olive oil. Pre heat the oven to 380 degrees.

Peel and slice the sweet potatoes into fries or cubes. Then for the fries pour a bit of the extra light olive oil over the fries in a small bowl.

Toss the fries in the oil....

Place on a baking pan with foil over it. We do not use a lot of foil at our house but sweet potato fries will stick to the pan....

Place them in a 380 degree oven and bake for about 10 minutes then remove them sprinkle them with salt and pepper and toss them just a bit and put them back in the oven for another 10 to 20 minutes. Once you cook them you will know how you like them. You can bake them a bit more crunchy if you like them that way.

For the cubes, peel and cut into small cubes and place in a skillet.

Pour some oil....

Then turn on the eye and saute them tossing them with a spoon or spatula.

Sorry for the blurred photos but we were trying to show here when they just start to turn speckled brown...

Put the oven proof skillet in the oven... for about 10 minutes. Remember you have already sauteed them on the stove top....

Now for the skillet cubes it is time to add minced garlic. So peel a couple of cloves and slice or dice the garlic...

Remove the pan from the oven,toss in the garlic and stir it around with the cubes.. and put the skillet back on the "Stove top burner not back in the oven.

And saute just until the garlic is done. Don't over cook the garlic or it will become bitter.

That is all we do. These are very good, we do not batter them or anything, just cook them plain. Most everyone that has eaten these really like them.

I cook mashed sweet potatoes by just boiling the sweet potato whole then when a sharp knife pierces all the way through the sweet potato it is done. Remove from the boiling water and peel the skin off the potato and place in a bowl and mash with a fork or potato masher or even a beater. Just however you like them. We cook most of our food plain and simple. But then there is always that yummy sweet potato casserole......
